Easy McWhinneys Traditional Irish Pork Sausage Casserole
Ingredients:
25g plain flour
300ml pork stock
½ teaspoon garlic powder
½ teaspoon paprika
½ teaspoon cumin
½ teaspoon chilli powder (mild or to taste)
½ teaspoon basil
½ teaspoon ground coriander
½ teaspoon oregano
1 tablespoon sugar
1 tablespoon tomato puree (concentrated)
30g butter
150ml milk
125g mushrooms
1 red pepper
1 cooking onion

1 apple (optional)
Preparation method:
- Lightly brown sausages and cut each sausage into 3 pieces and place in a casserole dish.
- Finely chop the onions and pepper. Slice mushroom. Add to the casserole dish.
- Melt butter in a pan over a low/medium heat. Keeping the pan on a low/medium heat, stir the flour into the butter to make a smooth paste, then stir in the milk. Keep stirring until the paste/flour is absorbed. Add tomato puree and stir in. Add the herbs, spices and sugar, stirring constantly. Heat gently for 2-3 minutes, then stir in the stock.
- Once sauce is blended pour into the casserole dish. Stir to ensure all of the ingredients are covered.
- Cook in a preheated oven at 180oC/gas 4, for one hour to one hour fifteen minutes. If adding the apple, core and chop the apple and add for the last 20 minutes of cooking.
