Rich McWhinneys Traditional Irish Pork Sausage Pie
Ingredients:
8 McWhinneys Traditional Irish Pork Sausages, diced
1 onion, chopped
2 cloves garlic, chopped finely
Sprinkle salt and black pepper
1 medium – large carrot, cut into tiny cubes
Handful fresh parsley, chopped
1 sprig thyme
100ml cream sherry
½ pint milk
100ml double cream
1 knorr ham stock cube
½ teaspoon paprika
Splash Worcester sauce
1 dessertspoon sugar
½ teaspoon cumin
½ teaspoon coriander
3 ounces butter for mash
50ml cream/milk for mash
Sprinkle black pepper for mash
Medium sized potatoes
Preparation method:
- In a pan place some olive oil and add diced pork sausage, onion, carrot, and salt and pepper and garlic and brown gently.
- Add sherry, chop parsley and sprig of thyme and simmer it for 5 mins.
- Then add water, stock cube, cream, sugar and Worchester sauce, bring to the boil and then simmer for 10 mins until sauce is starting to reduce. Put the sausages mixture in a rectangle shape oven dish and leave to cool.
- For the mash peel and boil the potatoes in water with one level teaspoon of salt for around 20-30 mins. Ensure they are soft before mashing.
- Once potatoes are soft, drain and add pepper, butter and cream or milk, and mash until very soft with no lumps.
- Then add mashed potatoes to the top of the sausage mixture, ensure all mixture is covered with potato and cook in a preheated oven at 180oC for around 40 mins.
