McWhinneys Traditional Irish Pork Sausage and Tomato Pasta Bake
Ingredients:
350g dried pasta
1 table spoon olive oil
1 table spoon oil
1 table spoon chopped garlic
1 medium onion, chopped
½ tea spoon salt
1 lb McWhinneys Traditional Irish Pork Sausage thickly sliced
2 tomatoes, chopped
3 table spoons tomato ketchup
2 table spoons tomato puree
1 tea spoon salt
1 tea spoon sugar
125ml water
115g cheddar or mozzarella cheese, grated
1 table spoon dried basil
Preparation method:
- Preheat the oven to 200oC/gas 6.
- Bring a large saucepan of salted water to the boil, cook the pasta for 8-10 minutes or until al-dente, drain and toss with one table spoon olive oil. Transfer to a baking dish and set aside.
- Heat a large frying pan with one table spoon olive oil over high heat. Stir-fry the garlic until fragrant, about 2-3 minutes, stir in the onion and salt and cook until soft, 3-4 minutes.
- Add the McWhinneys Traditional Irish Pork Sausage and stir until heated through, 2-3 minutes. Stir in the tomatoes, tomato ketchup, tomato puree, salt, sugar and water. Stir well and bring to the boil.
- Once boiled, pour over the pasta and sprinkle with cheese. Bake in the middle of a pre heated oven until the cheese turns golden, around 10-15 minutes. Sprinkle with dried basil and serve.
